Traybaked chicken drumsticks

Chicken drumsticks are the lower part of the chicken leg. Juicy, tasty, irresistible, they are often marinated and baked or stewed. Cover them in a sticky glaze and you have a show-stopping finger food for parties. But they also make a great family supper as children love them. Tip: half the time is marinating, which could also be done overnight if more convenient.

    Slash each drumstick across two or three times with a sharp knife to allow the flavours of the marinade to really penetrate the meat.

    Mix the cumin, paprika, vinegar and olive oil in a roomy earthenware or glass dish. Put in the drumsticks, rubbing the marinade into them. Now cover tightly and allow to marinate in the fridge for at least half an hour or overnight.

    Preheat the oven to 200C/180C fan/gas 6. Meanwhile, allow the drumsticks to come to room temperature.

    Cover a large, heavy baking sheet with baking parchment and spread the drumsticks on it, giving them plenty of room. Discard the remaining marinade.

    Bake for 20 minutes or until golden brown, fragrant and sizzling.
