    Heat 2 tbsps olive oil in a large, heavy frying pan and fry half the garlic and onion over a low heat until softened.

    Turn up the heat, add the pork and cook for 6 - 8 minutes until done, stirring occasionally. Season to taste with salt and pepper.

    Cut the red pepper into strips and cook for 3 minutes in a little olive oil in a grill pan or small heavy frying pan over a medium heat.

    Make the tzatziki: stir the cucumber, 1 tbsp olive oil, the lemon juice, chopped parsley and remaining garlic into the yoghurt. Season to taste.

    Toast the pitta breads and cut open. Stuff with the pork, Feta and red pepper, and top with a generous helping of tzatziki.

    Garnish with the remaining red onion rings and a few parsley sprigs.
