Chicken skewers with homemade satay sauce

Chicken skewers with homemade satay sauce

Step by Step

    Put the peanut butter in a small saucepan with 200ml water.
  • 2
    Add the garlic, ginger, sambal and honey and stir over a low heat until combined. Simmer for 10 minutes.

    Add the juice of half a lime and the coriander. Thin with a little water if necessary to make a thick sauce.

    Divide the chicken cubes over the skewers and put on a plate.

    Spoon over a little of the satay sauce and make sure all of the chicken is coated with it.

    Cook in a little oil in a frying pan over a high heat or place in an aluminium dish and cook under a hot grill. Turn frequently until cooked through.

    Cut the remaining limes into quarters. Serve the skewers topped with the rest of the sauce, the lime quarters, and sprinkled with chili pepper if desired.
