Pork belly slices
In the eyes of many chefs, pork belly is the most highly prized cut of all. It’s especially popular in the Chinese kitchen - as you may have noticed on the menu of any high-quality Chinese restaurant. Wondering why? The pork belly is cut from the underside of the pig, near the loin. It has a layer of fat running along the top plus smaller amounts of fat marbled throughout. That makes the meat rich in flavour and keeps it very moist and juicy.
